Casabianca Pecorino / Passerina

Naturalness.

The autochthon vines, Pecorino, successfully joined to Passerina, ennoble and characterize this pleasant and long-lived wine. The grapes are harvested in cases in the first week of September, through an handmade careful selection of the best bunches. By making the “in riduzione” vinification, so called because of the absence of oxygen, allowed us to enhance the most distinctive characteristics of Pecorino, naturally rich in thiols.

UNCHANGED PASSION.

Colour straw yellow. Very refined bouquet revealing floral notes of camomile, aniseed, herbs and slight hint of toasted almonds. Clean and fresh on the nose, with a distinctive citrus aroma and mineral personality. On the palate it is very pleasant, fresh, crispy, fruity, mineral with elegant citrus aromas. It’s ideal with seafood hors d’oeuvres, fish and white meat dishes.

“In Riduzione” vinification (in absence of oxygen): Tthe grapes are destemmed and crushed. Prefermentative cryomaceration of the juice and then soft pressed. pontaneous fermentation take place in vitrified concrete vats thanks to the wild yeasts, native to our terroir.
